Ingredients

5 Ingredients to be ground fine

12 shallots15 cloves garlic12 red chillies8 cm zedoary (kencur)

6 tbsp cooking oil

2 kg grated coconut, white part only15 pcs kaffir lime leaves4 tbsp shrimp paste powder4 tbsp palm sugar4 tbsp sugar2 tsp salt

Methods

1. Grind all the ingredients to a fine paste2. Heat oil in a wok and saute the fine paste until aromatic3. Stir in the coconut followed by all the other ingredients4. Continuously stir the mixture over medium to low heat until it becomes light, dry and flaky5. Store in  a container when its cooled
